Curried Chicken and Spinach Soup

INGREDIENTS:
One 10oz bag of frozen pureed winter squash
½ cup lite coconut milk
½ cup water
8oz boneless skinless chicken breast, thinly sliced
6oz bag spinach
2tsp lime
2tsp brown sugar
1/2tsp Thai red curry paste
1/4tsp salt
PREPARATION:
Heat squash, coconut milk, water in a medium saucepan, and cook on medium-high, stirring occasionally for 10min. Add chicken, reduce heat to medium, and cook about 3min, stirring occasionally. Add remaining ingredients and cook lowly an additional 3 min. Add salt to taste and garnish with cilantro.
